Jollof Rice Recipe

Jollof Rice is the most popular Nigerian recipe enjoyed at parties and festivities. It's also a Bisi Restaurant favorite! There are various ways to cook it, but this recipe is a typical one. 

Ingredients
  • 1 pound parboiled rice

  • 1 can tomato puree

  • 1 onion, sliced

  • 3 cloves garlic sliced

  • 4 teaspoons vegetable oil

  • 3 big red bell peppers, seeded and sliced

  • 2 teaspoons thyme

  • 2 teaspoons curry powder (Nigerian curry powder

  • 1 teaspoon white pepper

  • 2 - 4 bouillon cubes as needed for taste preference. 

Directions
  • Prepare the tomato stew by blending tomatoes, onions, red pepper, and garlic until smooth.

  • Add bouillon cubes, thyme and white pepper.

  • Add vegetable oil to the blended paste, and boil till paste is thick.

  • Wash the water until the water is clear. Drain through a fine sieve.

  • Boil white rice in water in a separate pot, add about 4 cups of water. 

  • When rice is about to be fully cooked, add paste and stir.

  • Set stove to low-medium heat and let it cook till rice is fully cooked, while stirring every 10 minutes till cooked.

  • Serve and enjoy!
