
Jollof Rice Recipe
Jollof Rice is the most popular Nigerian recipe enjoyed at parties and festivities. It's also a Bisi Restaurant favorite! There are various ways to cook it, but this recipe is a typical one.
Ingredients

1 pound parboiled rice

1 can tomato puree

1 onion, sliced

3 cloves garlic sliced

4 teaspoons vegetable oil

3 big red bell peppers, seeded and sliced

2 teaspoons thyme

2 teaspoons curry powder (Nigerian curry powder

1 teaspoon white pepper

2 - 4 bouillon cubes as needed for taste preference.

Directions

Prepare the tomato stew by blending tomatoes, onions, red pepper, and garlic until smooth.

Add bouillon cubes, thyme and white pepper.

Add vegetable oil to the blended paste, and boil till paste is thick.

Wash the water until the water is clear. Drain through a fine sieve.

Boil white rice in water in a separate pot, add about 4 cups of water.

When rice is about to be fully cooked, add paste and stir.

Set stove to low-medium heat and let it cook till rice is fully cooked, while stirring every 10 minutes till cooked.
